Fresh pan-fried plaice

Plaice are the smallest edible flatfish, caught mainly in the Baltic and North Seas. They have a dark gray to brown upper side with numerous orange-red spots. The crispiest fried skin is the tastiest. On the coast, they are often offered smoked. Freshly caught, they are fried. The most popular are plaice caught in May, with an average weight of 220 g to 250 g. Therefore, one plaice is calculated per person. Ingredients list for 4 people
